Getting Started With My Vegan Journey

When I transitioned it was crazy! Seriously!


After only watching a few documentaries on the state and quality (or lack thereof) of today’s food industry, I was convinced that I no longer wanted to eat meat or dairy. But then...what would I eat?? I honestly craved any and everything that was not vegan only because I knew I couldn't have them. So, instead of actually eating my favorite foods, I started listing them(!):

  • Buffalo Wings

  • Tuna Fish

  • Spaghetti & Meatballs

  • Curry Chicken

  • Pizza

I thought to myself, “How in the heck am I going to replace all these foods and make them vegan??” I began transitioning the contents of my fridge, took to Pinterest, and within no time I found recipes for so many foods I love!

My blog is dedicated to sharing tips and tricks with new vegans, long-time vegans and everyone in between; we can make food that’s both aesthetically-pleasing and appetizing! Meat who?!

I’ll debut some original recipes and may even post a video or two, so stay tuned!

“Chuna” (Chickpea Tuna)

Ingredients

1 (14oz) can of chickpeas

1/2 small red onion, chopped

1 tbsp Vegan Mayo

Paprika

Black Pepper

Salt

Old Bay Seasoning

Yellow Mustard

Parsley


Optional Tools of the Trade:

Food processor


  1. Drain and rinse your chickpeas.

  2. Pour the chickpeas into your food processor, adding onion, and pulse until grated.

OR

Pour your chickpeas into a bowl and mash them with a fork. Incorporate your chopped onions.

  1. Stir in your vegan mayo and feel free to add more if you like it really moist.

  2. Add remaining ingredients to taste. I recommend starting with 1/4 tsp of each ingredient and just a pinch of salt!

Enjoy your “Chuna” with bread, crackers or atop a garden salad; it is soooo good!
